Sour Cream Coffee Cake

TOPPING:
1/2 cup white sugar
1 tsp cinnamon
1 cup walnuts (optional)

MIX BY HAND
1 cup sour cream
1 tsp baking soda

MIX AND BEAT UNTIL CREAMY

2 eggs
1/2 cup melted butter
3/4 cup sugar

SIFT
1 and 1/2 cups cake flour ( I use cake and pastry flour)
1 and 1/2 tsp baking powder

Add dry ingredients to butter, sugar and egg mixture, using electric mixer.

Stir in sour cream mixture by hand until well blended.

Grease a 9″ square pan.

Pour half of the mixture. Sprinle with half of the topping. Repeat.

Bake 40 to 45 minutes at 325 degrees.

TIP: Since sour creams come in 500 ml tubs just double the recipe!
