Pininyahan (Hawaiian Chicken)

PININYAHAN

Chicken, cut up into small pieces

1 can Pineapple Chunks

2 to 3 TBSP Pineapple Marmalade, optional

4 Potatoes, cut into large pieces

3 Carrots, cut in big peces

2 TBSP Sweet Relish

Fish Sauce

Ground Pepper

1/2 cup Milk

1 Egg

1 to 2 cans Vienna Sausage, cut in half

 

Smother chicken with pineapple marmalade and sweet relish. Marinate in fish sauce, pineapple juice (from the canned chunks) and ground pepper, overnight if possible.

 

Fry potatoes and carrots. To lesssen points, don’t.

 

Saute the marinated chicken in garlic and onions.  When  chicken is well cooked , add the potatoes and carrots. Add pineapple chunks and the juice from marinade. Add water if needed . Add vienna sausages, mix gently/

 

Mix milk and egg. Pour over the chicken , let it boil once and remove from stove.

 

You can also sprinkle with cheese if so desired.
