Stuffed Eggplant

Eggplants

Ground Pork or Beef

Diced Onions

Diced Carrots

Diced Red Bell Peppers

Soy Sauce

Salt

Pepper

Eggs

 

Poke holes into the eggplants. Grill in toaster oven or oven or bbq grill.

Let cool. Peel off skin.

Using a knife, flatten the eggplant, set aside.

 

Mix ground meat and diced vegetables. Season with soy sauce, salt and pepper.

Add eggs to bind.

 

Scramble 1 to 2 eggs.

Dip the flattened eggplants.

Spread meat mixture over the eggplants and brush some of the scrambled egg on top.

Fry.

Serve with rice.
